Blind Assessment
Caramelly, delicately sweet-savory. Peach, caramel, shiitake, redwood, clover flowers in aroma and cup. Gently brisk and sweet-tart in structure; satiny in mouthfeel. The finish is wispy and delicate: peach and caramel.
Notes
Produced in the central highlands of Bali from the S795 variety of Arabica and processed by a hybrid method involving fermentation with cultured yeasts before drying with the “honey” or fruit flesh still adhering to the beans.
